Chilean cuisine is rich, with influences from indigenous, French and Spanish dishes. Cazuela belongs to the traditional dishes: a clear soup with chicken or meat and many other tasty ingredients.
The basis, as with many other dishes, are fresh vegetables and rich herbs from mostly organic cultivation.
Spices are usually seasoned with Merken. This is a traditional Chilean spice created by the Mapuche. The local variant is slightly spicy and smoky, made from Chilean peppers and smoked paprika.
